Put the red wine and thyme into a small saucepan and bring to the boil. Reduce down to a syrupy consistency. Remove from the heat and allow to cool. Discard the thyme and pour into a clean bowl. Season with 2 pinches of salt and 1 pinch of freshly ground black pepper and the mustard. Add balsamic vinegar and whisk well. Slowly add the remaining oils, whisking well.
