Banana Bread Ingredients

125 g Butter; (4oz) 50 g Cornflour; (2oz)
125 g Caster sugar; (4oz) 1 ts Gluten free mixed spice
2 md Sized eggs 2 ts Gluten free baking powder
3 lg Ripe bananas; mashed 1/4 ts Salt
175 g Ground rice flour; (6oz)

Instructions for Banana Bread

Pre heat the oven to 180 C, 350 F, Gas Mark 4. Grease and line a 1kg (2lb) loaf tin. Cream the butter and sugar until light and fluffy. Gradually beat in the eggs, one at a time. Stir in the mashed banana lightly. Sieve the flours, spice, baking powder and salt into the mixture and fold until incorporated. Pour into the loaf tin and bake for 1-1 1/2 hours. Cool on a wire rack. Notes The loaf is delicious topped with honey whilst it is cooling. Converted by MC_Buster.
