Bette's Blueberry Muffins Ingredients

2 3/4 ounces Butter; melted 1 teaspoon Cinnamon
1 cup Milk 1/2 cup Splenda
1 large Egg; lightly beaten 1 cup Blueberries
2 cups Flour 1/2 cup White chocolate chips
1 1/3 tablespoons Baking powder

Instructions for Bette's Blueberry Muffins

Preheat the oven to 400 degrees. Mix together the melted butter, milk and lightly beaten egg. Add the remaining ingredients and mix to combine, taking care not to overmix. Bake for 15-20 minutes.

Ingredient Insight - look inside this recipe

I substituted sugar for splenda, did not include chocolate chips, muffins came out perfect a golden brown, did not fall apart like some muffings do, I used fresh blueberries which added to the flavor, great recipe.
