Pineapple Muffins Ingredients

2 c All-purpose flour	1 lg Egg
2 ts Baking powder	4 tb Oil
1 ts Baking soda	1 c Pineapple; crushed
1/2 ts Salt	1/2 c Pineapple juice
1/2 c White sugar

Instructions for Pineapple Muffins

Sift flour. Add baking powder, soda, salt. Sift again. Beat the egg with the sugar. Add the oil, pineapple and juice. Make a hole in the dry ingredients and add the liquid ingredients. Stir just enough to moisten. Do Not Overbeat! Fill prepared muffin tin 2/3 full. Bake in 400 F oven for 20-30 minutes.
