Penne Arrabiata Ingredients

1 c Extra virgin Olive Oil Salt to taste
2 tb Dried hot chili flakes 8 oz Penne; (short tubular pasta)
4 Cloves garlic; peeled and 1 tb Chopped fresh parsley
6 Ripe tomatoes; peeled, Freshly grated Pecorino

Instructions for Penne Arrabiata

Combine olive oil and pepper flakes. Bring to a boil and add garlic gloves. Marinate for at least 30 minutes and strain with cheese cloth. In a saucepan, heat 4 T of strained chili-garlic oil with tomatoes. Add salt. keep warm over low heat. Cook pasta in boiling water. Drain well, toss in sauce pan with oil, tomatoes and parsley.
