Mock Apple Pie Ingredients

1 Pastry for 2-crust pie	2 1/4 ts Cream of tartar
30 Ritz crackers	1 ts Lemon juice
1 3/4 c Water	1/4 ts Lemon rind; grated
1 1/2 c Sugar	Butter
1 3/4 ts Cinnamon

Instructions for Mock Apple Pie

Line 9 inch pie pan with crust. Break crackers into bottom. Combine remaining ingredients (except butter) and pour over crackers. Dot with butter. Cover with top crust. Slit top crust.
