Marinated Pork Roast Ingredients

1/2 c Soy sauce 1 ts Ginger
1/2 c Dry sherry 1 ts Thyme
2 Cloves garlic; minced 4 -(up to)
2 tb Dry mustard 5 lb Pork roast

Instructions for Marinated Pork Roast

Make marinade of all ingredients except pork. Add pork, cover and refrigerate overnight. Remove meat and bake in roasting pan uncovered at 325 for 2-1/2 to 3 hours, basting occasionally during the last hour with marinade. Quite good. I increased the marinade by 50% (I tend to like lots for basting and to serve as au jus with the meat or gravy). I'd also recommend basting all along, not just at the end. And I'd change the proportion of soy sauce and sherry from 50/50 to 1 part soy sauce to 2 parts sherry. For me the soy sauce buried the sherry when I made it at 50/50. But overall I liked it a lot.
