Twice Baked Potatoes Ingredients

2 medium Baked potatoes 1/8 teaspoon Salt
1/3 cup Sour cream 2 teaspoon Bacon bits
3 tablespoon Milk 4 teaspoon Cheddar shredded
2 teaspoon Parmesan grated

Instructions for Twice Baked Potatoes

Bake Potatoes at 425 for 40-45 minutes or until tender. Allow to cool to the touch. Ina a bowl, combine sour cream, milk, Parmesan cheese and salt. Cut a thin slice off the top of potatoes; carefully spoon out the pulp, leaving a thin shell. Mash pulp with sour cream mixture; stuff shells. Sprinkle with bacon and cheddar cheese. Bake at 325 for 20 minutes or until heated through.

This was a very tasty side dish, I forgot all about doing the twice baked thing. With the parmesan in the mash and the cheddar on top yummy. I even used the little bit left over in the potato skin tops as the appetizer! Yum

I've made it lots of times... its great... you can shorten the cooking time by microwaving the potatoes first then crisping them in a hot oven

I used Russet potatoes but the filling still turned out a bit gummy. I admit I did add an extra 1/2 tbsp milk. I'll make it again just to see if I can perfect it a bit.

We tend to forget the twice baked potato..Tonight it went with Weight Watchers "Oven Fried Chicken". It's a "make again recipe..

I skipped the bacon bits (I forgot to buy them) and added some monterey jack cheese instead. I used a larg Idaho potatoe and we ate half each as a side dish... terrrific
