Teriyaki Chicken

Great basic Chicken Teriyaki recipe. Why use the bottled stuff when the make-it-yourself marinade is easy and so much tastier?

Ingredients

--MARINADE--


Preparation

Combine the soy sauce, brown sugar, ginger, sherry, and vegetable oil in the marinade.

Put chicken and marinade in ziploc bag and marinate for at least 3 hours.

Grill over medium heat until cooked through; about 20 minutes. Slice on a diagonal bias and serve over cooked white rice. Top with sesame seeds.

This recipe is a good starting point for a number of great dishes, including grilled shrimp and baked teriyaki chicken wings. When I've made this in the past, I always use pineapple juice for added sweetness, and to help dilute the saltiness of the soy. I also add a teaspoon of garlic powder, and a teaspoon of roasted sesame oil, and definitely use 4-8 chicken breasts for this recipe, nicer to cook for 4 than for 1! Besides, if you do have any leftover, as RickH notes, it is great sliced onto a salad or in a sandwich. For a change, try serving it on Uncle Ben's Wild and Long grain rice, prepared per package directions. This is the rice blend/seasoning that many restaurants use with a dish like this, and I still love the flavor of seasoned rice to plain white rice. Another tip is to grill either canned or fresh pineapple slices and serve on top of your grilled chicken breasts, rather than the sesame seeds. I think it looks great and the grilled pineapple is delicious too! No, I don't work for Dole or Uncle Ben's, but I've worked in many professional kitchens!! ;-)

This recipe was fabulous. Thank you for posting it. My kids loved it, and my wife is putting leftovers on a salad for lunch today. For my taste it was just a little salty, likely from the soy sauce. I have had other homemade teriyaki that was somewhat sweeter that I very much liked. Next time I will reduce the soy to 1/4 cup and increase the brown sugar to 1/4 cup. Still I would recommend it to all, as it is wonderful!

I replaced the Brown Sugar with Splenda Brown Sugar and the rice with Penne Pasta. This reduced the sugar per serving from 14 to 4 and over all carbs from 58 to 26 and it tasted great.

Great flavoured chicken breast. I would recommend this any time. Next time though I think I will cut the marinade in half. In a plastic baggie that would be lots.

Everyone liked this recipe, especially the kids. To compliment the chicken we also served pineapple and mandarin oranges. I simply created the marinade in the morning before work and came home to a perfectly seasoned chicken.

Steve, I don't think you have a bad recipe in your entire repertoire. This is sooooooo good. I, like a previous poster didn't have quite 3 hours, so I cubed the chicken and did a shorter marinate time in my foodsaver (which marinates in about 20 minutes, although I gave it at least an hour and a half. Since I don't like much ginger, I added just a touch of ground ginger, and two large minced cloves of garlic. Delish.

I served it on skewers with some brown rice, and grilled/roasted onion and pineapple

Very easy to make, I marinated the chicken overnight and got the most tender chicken I've ever made. I agree - why buy the bottled stuff?

I didn't plan ahead enough to marinate for 3 hours... I cut mine into cubes (to put on skewers) and marinated only about 30 minutes, but it was still good. I did add one clove of crushed garlic to the marinade. After 30 minutes of marinating I alternated red peppers, onions, and chicken on skewers and grilled. Quite good!
