Steve's Chicken Peach Salad

Delicious, light chicken salad. Can be enjoyed year-round with canned or flown-in peaches, but also great for a spring or summer dinner with fresh peaches.

Ingredients


Preparation

Chill plates.

Mix cooked chicken breast, peaches, pecans, celery with poppy seed dressing. Refrigerate.

When ready to serve, arrange salad on bed of Butter (or Boston) lettuce and torn iceberg lettuce. Garnish with pecans and cherry tomatoes.

I managed to select some excellent peaches for this salad. I made a creamy poppy seed dressing that I plan to keep in rotation. For the chicken, I made a poaching liquid of water, sherry, garlic cloves, and herbs de provence. YUM! This chicken salad recipe is a keeper. It should make really good sandwiches too.

This salad would also be very good with ripe mangoes instead of the peaches. Delicious!

We had some great peaches at our local market this week, so I made this salad with other ingredients on-hand. Very refreshing, brightly flavored late summer meal.
