Balsamic Chicken On Minted Spinach, Fennel and Grape Slaw

Preparation

In medium bowl, whisk together balsamic vinegar, olive oil, mashed garlic, brown sugar, 1/4 cup fresh mint and 1 teaspoon salt. Pour ingredients into large zipper-lock bag; add chicken and seal bag. Turn chicken to make certain that all parts are coated with marinade. Refrigerate for at least 2 hours and up to 24 hours.

To cook chicken, place large skillet on stove over high heat. When very hot, add 1 tablespoon olive oil. Remove chicken from marinade and let excess drip off. Add chicken to skillet and saute, turning, until both sides are nicely browned and chicken is cooked through, about 5 - 7 minutes per side. Transfer chicken to plate and keep warm.

In large bowl, toss spinach, fennel bulb, grapes and 1/4 cup fresh mint. In small bowl, whisk together 1/4 cup olive oil, red wine vinegar, minced garlic, shallots, 1/4 teaspoon salt and black pepper. Pour vinaigrette over slaw and toss well to coat. Divide slaw among four plates. Cut chicken into long, thin strips and arrange on top of slaw. Garnish with additional mint slices, if desired.

This was PHENOMENAL. Who would have thought that grapes, balsamic vinegar, red wine vinegar, spinach and mint would create the basis for such a wonderful recipe? (I didn''''''''t.) But I tried it and my wife and I both loved it. A keeper. The fennel was so supprising. If you haven''t had it your in for a treat.

Wow! The slaw was FABULOUS! I went by the recipe and even with two bulbs of fennel the slaw was fantastic. I might add just a bit more mint next time. I thought I ruined the chicken, and I can attest to the hard time cleaning the stainless steel pan afterwords. But to my relief, my wife who always tries my feeble attempts at cooking liked it, went back for seconds in fact. I'll probably butterfly the chicken breasts next time as they took a bit more time to cook through than stated. My wife wants to make the slaw for her upcoming Bunko night with the girls! Will definitely make this again!!

This was a FANTASTIC recipe, my husband and I both loved the different flavors, I would never have thought to use these ingredients together! Very easy to make - I assembled everything when I started marinating the chicken - and put it all in ziplocs until time to cook - what could be easier? I highly recommend this recipe to all.

I found this to be a nice refreshing summer meal owever it was a little bland. I used only one fennel bulb and had only about 1/8 cup of mint left for the slaw. I also grilled the chicken, first I seared both sides and then finished the grilling using the indirect grilling method. I wanted something more so a I crumbled some feta cheese which went very well with it. The next time I will make extra marinade and reduce some of it to use as a glaze to put on top of the finished chicken.

This is a great weeknight recipe. Easy to prepare and great tasing. I added a ripe pear to the salad and found it a perfect addition. Next time I make this recipe I would cut the fennel way back. The fennen was far to strong a flavor with the other delicate ones. Also I found the cooking time on the chicken it be understated.

Enjoyed this again, and I cannot say enough good things about this recipe. If you've looked at the list of ingredients and say you probably won't like it, give it a try and you might be surprised. The flavors combine in a sweet/minty/exquisite way that's hard to describe. HOWEVER, do be careful about your choice of the pan. Boy is that sugar that the balsamic vinegar leaves behind difficult to clean up off a stainless-bottomed pan! The caramelization is what gives it the flavor, so don't be afraid to let it go a little, but enlist someone with elbow grease in the cleanup ahead of time.

Had this again last night and really enjoyed it. Make sure you use red grapes; green grapes just won't cut it. The grocery store had fennel this time and it added a nice extra touch.
