DIRECTIONS: This easy, elegant quiche makes a delicious brunch, lunch ordinner served with a fresh fruit salad. Quiche Lorraine can be prepared 2-4hours in advance of baking; chill until ready to bake.

1 Preheat oven to 350F

2 Cook bacon in large skillet over medium heat. When bacon starts to turnbrown, add onion. Cook until bacon is crisp; drain. Sprinkle cheese into bottomof pie shell. Top with bacon mixture. Combine evaporated milk, eggs, salt,pepper and nutmeg in small bowl until blended. Pour into pie shell.

3 Bakefor 30 to 35 minutes or until knife inserted halfway between center and edgecomes out clean. Cool for 5 minutes on wire rack before serving.

Tasty! I made this at the last minute when I was stumped on what to make for breakfast! It was easy, fast, and best of all tasty!! I could have made two because the first one went so fast I didn't even get a piece. I had a bite of my daughters!!! (Would add another egg and extra milk to fill pie tin more.)

This also freezes well. I cut it in quarters before freezing. That way I could take out a couple of pieces for a quick, light dinner.
