Grilled Lemon Lime Chicken over Angel Hair Ingredients

2 each Chicken breasts 2 tablespoon Parmesan for garnish
4 tablespoon Olive oil 4 servings Angel Hair
2 each Lime juice of1 tablespoon Butter
2 each Lemon juice of3 teaspoon Fresh parsley for garnish
2 cloves Garlic crushed1 teaspoon Garlic salt

Instructions for Grilled Lemon Lime Chicken over Angel Hair

Combine olive oil, lemon juice, lime juice, garlic, and the skins of the lemon and limes in a ziploc bag. Marinate overnight, or a minimum of four hours.

Prepare hot grill, and bring large pot of water to boil.

Grill chicken 5-6 minutes on each side.

When chicken is four minutes from complete, place angel hair in water, boil for 2-3 minutes until just done, and drain. Drizzle with olive oil, butter, and add garlic salt. Remove chicken from grill, and slice along bias; 1/2 inch pieces. Arrange on bed of angel hair, top with shaved parmesan cheese, and serve immediately.

Ingredient Insight - look inside this recipe

This was easy but since it is snowing and about 10 degrees outside, I opted to cook the chicken inside, in the frying pan. It was good, but the kids thought it was too lemony.

It is difficult for me to find a recipe that all 6 kids and dad agree on. This one did the trick! And, it's easy enough for our busy schedule to fit some family time in around a healthy meal!

Enjoyed this again tonight. Some tips to keep it from drying out: (1) Flatten the chicken breasts a bit before putting them on the grill, (2) Get the grill nice and hot, and dampen a rag with vegetable oil -- using tongs, oil the grill, (3) Don't overcook the chicken -- 10-15 mins total was just about right, and baste frequently.

Easy, delicious summer grilling meal. Always a reliable hit. It will be tempting to shorten the marinating time, but don't. It makes all the difference.

I thought this was a great and easy recipe. I broiled the chicken since we didn't have grilling weather. Still great, and brought a little of the summer citrus flavor to my winter kitchen!
