New-Potato Salad in Red Onion Dressing Ingredients
2 pounds Small new
potato
es
3/4 cup
Sour cream
or plain yogurt
Salt
1/2 cup Sweet
red onion
finely chopped
Freshly
ground pepper
1/2 cup
Dill
minced
3/4 cup
Mayonnaise
homemade or hi qlty
Dill
for garnish
Instructions for New-Potato Salad in Red Onion Dressing
Wash the potatoes under running cold water, scrubbing well enough to remove all traces of soil.
Cook (place in boiling water and boil until fork-tender), cool and dry the potatoes. Transfer the potatoes to a bowl and cut into halves, quarters, or slices if desired. Season to taste with salt and pepper. Cool slightly before dressing.
In a bowl, combine the mayonnaise, sour cream or yogurt, onion and dill and blend well. Pour over the warm potatoes and toss gently to mix thoroughly. Garnish with herb springs and serve at room temperature or slightly chilled.

All I have to say is after we had this with supper, my husband loved it so much he dragged me off to the bedroom!

I couldn't believe it when my husband said he liked it. I like sauces and dips with everything and he is a clear-cut steak and potatoes kind of guy and he loved this recipe. It is certainly on future menus.
