Grilled Lemon Lime Chicken with Angel Hair

A simple dish that scales very well -- make it for 2, 4, 8, or a crowd.

Ingredients

Preparation

FOR MARINADE:

In a bowl, grate the rind off of about half each of the lemon and lime rind, then squeeze full lemon and lime juice into the same bowl. Add salt, garlic, and olive oil and stir.

Pour into ziploc plastic bag and marinate overnight, or at least 6 hours.

Prepare medium-hot grill. Grill chicken about six minutes per side, or until done all the way through. (Take care not to let chicken dry out on the grill. Add marinade halfway through but fully cook it off.)

Warm serving platter in the oven on low.

Boil water. Boil angel hair briefly, for about 4 mins until done. Remove from water, add pat of butter and a small amount of olive oil, plus garlic salt and parmesean.

Cut up chicken and place on top of angel hair. Garnish with parsley. Serve immediately.
