Cowboy Supper Ingredients

1 pound Ground beef drained1/2 large Onion chopped
4 medium Potatoes sliced1/2 large Green pepper chopped
2 can (16 oz Pork N' Beans 1 bunch Ketchup to taste

Instructions for Cowboy Supper

In large skillet, brown ground beef and drain grease. Saute onions and peppers and add to beef.

Preheat oven to 350

Then, In a large baking dish (I use a 12" X 14"), coat with pam and layer the ingredients as follows: 1/2 the ground beef mixture, 1/2 the potatoes, 1 can of beans and as much ketchup as you want so that you have 2 layers of each ingredient and ketchup on top.

Bake at 350 for 45 minutes to 1 hour, or until potatoes are tender. The thinner you slice your potatoes, the quicker it cooks! Enjoy!

***If you want, you can add a little BBQ sauce instead of some of the Ketchup or BBQ Pork N Beans or even baked beans for quite a different taste all-together.

***Also you can pre-fry the potatoes in a skillet for faster cook time and more tender potatoes but beware of the extra fat content!

Very easy and tasty! I fried the potatoes in bacon grease and used baked beans -no ketchup. My husband would like bacon in the mix next time. Really good.

I imagine eating this on our next CubScout camping trip. I reduced the potatoes by 1/2 and cut them paper thin. I also reduced the beans to two 11oz cans. I squirted on ketchup in a zigzag pattern and then smoothed it out with a spoon. My guys ate this up!

I liked the simplicity of this dish! I had a little trouble with the potatoes being a little hard (I even pre-fried them like was suggested). Perhaps I cooked them too long? Not long enough? Not sure. Do you think next time I could substitute mashed potatoes instead? I can't wait to try it again with the barbecue flavorings!

This recipe was really good and easy too! I didn't add very much ketchup. I sliced the potatoes put them in a small cassarole bowl and put then in the microwave for a couple od minuites to soften before adding to casserole. I might try this recipe with frozen hash browns. My Mom made fried potatoes and we put pork-bean over them.
