Baeckeoffe Ingredients
1 pound
Pork
Loin deboned
1 stalk
Thyme
1 pound
Lamb
Shoulder deboned
1 each
Bay leaf
1 pound
Beef
Chuck deboned
2 stalks
Parsley
10 ounce
Onion
s
1 bottle Dry
white wine
3 pound
Potato
4 teaspoon
Shortening
2 each
Carrot
1 pinch
Salt
to taste
2 each
Leek
s
1 pinch
Pepper
to taste
1 clove
Garlic
Instructions for Baeckeoffe
The day before: Cut meat in approx. 2½ oz pieces. Peel 1 onion, garlic, carrots, leeks and slice them thinly. Put diced meat in a terrine; add vegetables, thyme, bay leaf, parsley, pepper and wine. Cover and marinate overnight.
Next day: Peel remaining onions and slice them thinly. Peel and slice potatoes. Then preheat oven to 350°F-400°F.
Drain meats and put the marinade aside. Remove vegetables from liquid.
Grease casserole with shortening.
In successive layers, arrange potatoes, onions, vegetables from marinade and diced meats. Add salt and pepper to each layer.
Top it off with a layer of potatoes and moisten with marinade.
Add water if necessary to bring liquid to the top of the dish.
Cover casserole and seal with a mixture of flour and water.
Bake at 350°F for 2½ to 3 hours.
