Baked Acorn Squash with Brown Sugar

Delicious.. The standard recipe for, "country style," baked winter squash

Preparation

1. Preheat oven to 425°. Generously butter a rimmed baking sheet.

2. Halve 2 medium acorn squash (about 1 1/2 pounds each) crosswise. Scoop out seeds; discard. Slice a small piece off bottom of each squash half just enough to level.

3. Set squash halves, scooped sides down, on prepared sheet. Bake until golden, 20 to 25 minutes. Turn squash; prick insides all over with a fork. Divide 2 tablespoons butter and 2 tablespoons light-brown sugar among halves; season with coarse salt and ground pepper. Continue to bake until flesh is easily pierced with the tip of a paring knife, 25 to 30 minutes. Serve warm.

I make a similar dish in the microwave, with chopped apples in the center, brown sugar on top. It is delicious.

This is vegan ONLY IF the butter is replaced with a non-dairy alternative (e.g. a soy margarine, like Earth Balance).

I substituted sucanat for the brown sugar and spiced with cinnamon, ginger and nutmeg. Instead of mixing the butter, I just added a pat on top of the sucanat and spice mixture. It's very simple and tasted fantastic. We drizzled a little maple syrup on top.

I've found cooking acorn squash is very easy in a microwave. Place cut side down on a plate and cook on high until soft. Time depends on power and size of squash - about 6-8 minutes for one half. Turn right side up and prick flesh or stir up in shell. Add salt, pepper, butter, brown sugar and reheat to melt, or lite maple syrup to save calories.

Mix brown sugar and melted butter to a "toothpaste" consistency.

It is prepared nearly exactly the way my family has eaten it since childhood- and our mother never seemed to write down her recipes so we all bake it the way we remember it!
