Lightly beat egg white and extract. Beat in sugar until it holds
together.
Turn onto a surface lightly dusted with powdered sugar and roll
out to 1/4 inch (don't forget to dust the rolling pin with sugar,
too). Cut out 1 1/2" circles. Place on a cookie sheet covered
with wax or parchment paper, let dry about 6 hours (little longer
if it's rainy). Dip in chocolate.
Note: Add a bit of unsalted butter or shortening to the chocolate
to help with bloom, unless you are good with tempering.
