Libby's Great Pumpkin Cookie Ingredients

4 cups All purpose flour	1 cup Sugar
2 cups Rolled oats	1 large Egg
2 teaspoons Baking soda	1 teaspoon Vanilla
2 teaspoons Cinnamon	16 ounces Pumpkin Libby's solid packed
1 teaspoon Salt	1 cup Chocolate chips
1 1/2 cups Butter or margarine	2 cup Brown sugar firmly packed

Instructions for Libby's Great Pumpkin Cookie

Preheat oven to 350. combine flour, oats, soda, cinnamon, and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin mixing well after each addition. Stir in chocolate chips. For each cookie , drop 1/4 cup dough onto lightly greased cookie sheet; more dough to form stem. Bake 350. 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks. Decorate using icing or nuts. Yields about 32 cookies. Variation substitute 1 cup of raisins for cholate chips.
