Preparation

Preheat the oven to 450F. Warm 1 tablespoon butter in a large, non-stick saute pan over medium-high heat. Add the apples and saute until softened. Set the saute pan aside because you will need it again. Tuck a slice of Brie and several slices of apple into the pocket on the underside of the chicken breasts between the breast and the tenderloin.

Season the chicken with salt and pepper. Pat a little flour onto both sides of each chicken breast.

In the saute pan, warm 1 tablespoon butter over high heat. When the butter foams add the chicken breasts and brown them on both sides. Transfer the chicken to a sheetpan, stuffed-side-down, and put it into the oven for 12 to 14 minutes. While the chicken is cooking, make the sauce. Pour the cider and broth into the saut pan and boil it over high heat until reduced to about 1 1/2 cups. Swirl in the remaining 2 tablespoons of butter. Season to taste with salt and pepper. To serve, divide the chicken among 4 plates and pour a little sauce over each.

I really liked this recipe. I make it according to the directions and it turned out great! I do agree with the other post here that the "stuffing" is hard to keep inside of it though. So the appearance was different then what I saw in the picture. Next time I make this I may try holding the inside in better with toothpicks in the chicken breasts.

Great recipe! I used fontina cheese and added extra apple slices for garnish. The sauce is delish and actually looks like a gravy with fewer calories.

The sauce took MUCH longer than I thought / than the recipe made it sound. I sat there for 25 minutes AFTER eating the chicken (I just got too hungry) waiting for the sauce to thicken.

Or was it just me? I liked the recipe otherwise, though I wish I didn't have to buy a whole jug of apple cider just to use a small part of it for the sauce.

Try with mozzarella or halloumi cheese insted and you will get a great dish. These cheeses stays beter inside the chicken.

The stuffing does not stay in the chicken when prepared as the instructions state. Other than that, this was tasty.

Love the melding of flavors. Chicken stayed moist. I put aside a few slivers of apple and a few slices of brie to have on the plate for presentation. It was also great to have for parts of the chicken that weren't stuffed. I omitted the salt & pepper then grated a bit of ginger root into the topping. It added a bit more dimension to the flavors. I also put the chicken breasts in a ziploc bag with cider for about an hour while the chicken finished thawing. I used that cider with the chicken juice to make the topping. The juices helped to thicken the sauce.

With the first bite my significant other was raving about how wonderful it was and the unique yet pleasing mix of flavors. He was only going to eat half. Before long his plate was clean and he proclaimed it his new favorite meal. He was hoping I'd made more {i cut the recipe in half for the two of us} so that we could have it again tomorrow night.

I couldn't find cider so I substituted it with apple juice, everyone loved it! I will try the cider next time and I'm sure it will be even better!

the version of 'big oven' that was downloaded from the Team Diets website calls for meatballs, not chicken. Just seems a little odd......

This was GREAT! For a house of picky eaters this went over very well. Next time I will add more Brie and thicken my sauce a little bit. Overall very good!

This recipe just oozes flavor. The sauce is a perfect complement. I added extra brie and apples. Two 10 year old boys gave this recipe 5 stars.

I was looking for something different to do with chicken. This one qualifies and tastes wonderful. It makes for a great presentation. A little more brie would be good but then I really like brie. My only suggestion would be to stuff the chicken instead of placing the apples between the loin and breast. Mostly because the loin on most breasts does not cover enough and the apples and brie leak out easily and also it is sometimes hard to get chicken breasts with the loin attached (for a good price).

Very good -- much sweeter than I thought (the reduction of the Apple Cider, plus the pre-softened apples made it quite sweet). The brie added a nice savory finish. Cooking time in recipe is quite precise, and worked perfectly for me. Chicken breasts remained juicy; will be making this again.
