Southern-style Oven Fried Chicken Ingredients

1/2 cup all-purpose flour 3 ounces buttermilk
1/4 teaspoon table salt 3/4 cup cornflake crumbs
3/23 teaspoon cayenne pepper 1 pound uncooked boneless skinless chicken breast(s), four 4-oz pieces

Instructions for Southern-style Oven Fried Chicken

Preheat oven to 365F. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.

Combine flour, salt and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.

Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then corn flakes crumbs.

Place coated chicken breasts in prepared baking dish. Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking). Yields 1 breast per serving.

This was delicious!!It's my new favorite fried chicken recipe.The chicken was very moist,and the coating was nice and crispy,and stayed that way even when I reheated leftovers in the oven for dinner the next night!I will probably be making this weekly,because my husband and I liked it so much,and we eat a lot of chicken dishes.I highly recommend this!!

The chicken was very moist and the corn flakes added a nice crunch, and it was quick and easy to prepare., but I found it lacking in flavour for my taste. All I could taste were chicken and corn flakes. If I were to make it again, I add a lot more cayenne pepper, and perhaps some other spices, and probably substitute something else for the corn flakes.

This is a SURE keeper. Made this for dinner tonight and even my husband commented on how tender it was. So....that said a lot for this dish since he is a die-hard fried chicken fan. Will definitely make this again....and again.... Thanks for posting.

I have made this recipe many times and it's one of my favorites. The buttermilk keeps the chicken tender and moist, and the corn flake crumbs add a nice crunch. All this and low fat too!! If you don't have buttermilk handy, you can make your own by adding a little lemon juice to milk and letting it stand for five minutes. Looks ugly, but serves the purpose. :) Anne
