Cuban Potato Salad Ingredients
5 pounds Red
Potato
es, Small
2 cups Green
Olive
s chopped
2 pounds
Bacon
2 1/2 tablespoon
Garlic
powder
3 3/4 cups
Red Onion
s diced
2 1/2 cups
Mayonnaise
10 ea Green
Onion
s sliced
2 1/2 tablespoon
Dijon mustard
2 cups
Dill
Pickles chopped
3 teaspoon Habanero Sauce
Instructions for Cuban Potato Salad
Boil potatoes with salt. Drain and then cube when cool. Fry bacon crisp and cut into 1/2 inch pieces. Combine potato cubes, bacon, red onions, green onions, dill pickles, green olives and garlic powder. Mix mayonnaise, Dijon mustard and habanero sauce and then toss with mixed ingredients. Best left to set overnight in the refrigerator, but let is sit on the counter 30 minutes before serving.

This recipe is incorrectly listed as vegetarian. Because it contains bacon, it is not vegetarian. :)
