Carrot Cake Ingredients

2 cups all-purpose flour 3/4 cup applesauce
2 cups granulated sugar 3 eggs
1/2 teaspoon salt 2 cups finely grated carrots
1 teaspoon baking soda 2 teaspoons vanilla extract
2 teaspoons ground cinnamon 8 ounces well drained crushed pineapple 1 can
1/2 teaspoon ground nutmeg 1 cup shredded coconut
3/4 cup vegetable oil 1 cup chopped walnuts or pecans

Instructions for Carrot Cake

In a mixing bowl, combine dry ingredients; stir to blend. Add eggs, oil,applesauce, shredded carrots and vanilla; beat until well blended. Stirin pineapple, coconut and walnuts. Pour into a greased and floured13x9x2-inch baking pan.

Frost with cream cheese icing if desired.

I liked the recipe because it was easy to fix. I would serve it with ice cream, coffee, or nothing. It was good all by itself. There is nothing that I would do to improve this recipe. It was an excellent recipe and was well enjoyed by the whole family. I got (This cake is great) from everyone that ate it. I myself thought this cake was great, although I am not much of a cake eater, I loved it. It had such great flavor and was very moist. I frosted it with Cream Cheese Frosting.
