Annabel's Rice Pudding

This is the first part of a traditional Danish christmas dessert. Add a pint of whipped cream and a small bag of slivered almonds. Tradition have it, that a whole blanced almond is hidden somewhere in the bowl and the person finding it, either get a small present or don't have to do the dishes after dinner.

Preparation

Bring the milk to the boil, then pour over the rice and sugar. Then either bake in a very low oven for about 2 hours, or, which I prefer, stir on a low heat on the top of the stove until the rice is cooked.

This will not thicken all that much until it is cold, but when cold it is deliciously creamy.
