Chicken satay skewers Ingredients

3/4 pound Chicken breast skinless, chopped into bite sized pieces2 tablespoon Peanut butter crunchy
1 clove Garlic crushed1 tablespoon Tomato puree
2 tablespoon Dark soy sauce 100 mililiter Pineapple juice
1 teaspoon Dried chile flakes

Instructions for Chicken satay skewers

1. Place the chicken in a shallow, non-metallic dish.

2. Mix together the garlic, soy sauce, chilli flakes, peanut butter, tomato puree and pineapple juice. Pour the mixture over the chicken and toss well to coat all the pieces. Cover and leave to marinate for 30 minutes.

3. Thread the chicken pieces on to wooden skewers. Place them under a hot grill for 15 minutes, turning frequently. until evenly browned and cooked through.

tip: Soak the wooden skewers in water for 20 minutes before using, to prevent them from burning.

I made this with frozen chicken tenders from Costco. pulled out 12, put in dish frozen. slathered with sauce, put in 200F oven for 35 min. they were watery then, but I didn't mix in the water. put on skewers, 2/skewer. put in broiling pan, slathered sauce over top. broiled for 10 min, turned, redistributed sauce, broiled. served with wild rice pilaf. terrific and quick

Fantastic! Tasty, fun, and great as an appetizer or main dish. Everyone loved the peanut sauce too! We served it with potstickers and simple sesame noodles.

I made these for New Year's Eve. Laid them out as a Appetizer for people to pick on. Everyone loved them. They were very easy to make, tasty and cheap to make.
