Caribbean Roast Pork Loin Ingredients

2 tsp Olive oil 3/4 tsp Nutmeg
1 tsp Pepper 3 1/2 pound Pork loin roast boneless, rolled
3/4 tsp Cinnamon

Instructions for Caribbean Roast Pork Loin

Combine the oil, pepper, cinnamon, and nutmeg; rub over roast. Place roast on a rack in a shallow roasting pan. Bake at 350 degrees for 1-1/2 to 2 hours or until a meat thermometer reads 160. Let stand for 10 minutes before slicing.
