Reuben Casserole Ingredients

12 ounces Corned beef sliced2 cups Swiss Cheese shredded
1/4 cup Thousand island dressing 6 slices Rye bread
1 package Sauerkraut 1/4 cup Butter melted

Instructions for Reuben Casserole

1. Preheat over to 350
2. In an 8-inch square baking dish, layer corned beef, salad dressing, sauerkraut and swiss cheese.
3. Toss bread with butter and sprinkle over corned beef mixture
4. Bake for 30 minutes or until bubbly and heated through

Even my extra picky husband said this was a "do-again" recipe. Since the recipe wasn't clear about what to do with the bread before tossing it with the butter, I tore it into small pieces because that was the only way I could think of to get it into a form that I could "sprinkle" on the other layers. The bread ended up rather like croutons and both my daughter and my husband said it was the crowning touch!
