100% would make this recipe for Grilled Snapper Vera Cruz again.
An amazing sauce to go atop any fish really. I also have used over pasta and received rave reviews. Add a little cornstarch and water if you'll be putting it over pasta or rice.

Grilled Snapper Vera Cruz Ingredients
4 snapper fillets 6 ounces each 2 tablespoons
olive oil
2 large
tomato
es chopped
Salt
and freshly ground pepper
1/4 cup green
olive
s pitted and chopped
2 tablespoon
olive oil
2 tablespoon
caper
s drained
1 large
Onion
finely sliced
1 serrano
pepper
finely chopped
2 cloves
garlic
finely chopped
1/2 teaspoon
sugar
1/4 cup dry
white wine
1 bay lea
Instructions for Grilled Snapper Vera Cruz
Brush the fish with olive oil, season with salt and pepper and grill for 2 minutes on each side. Remove and cover.
Heat olive oil in a non-corrosive saute pan over medium-high heat, add onions and garlic and cook until soft. Add wine and reduce. Add tomatoes, green olives, capers and pepper, sugar and bay leaf and bring to a boil and cook until thickened. Reduce heat, add grilled fish and cook for 2 minutes

Very good recipe. However I made it with boneless, skinless chicken breasts. The sauce also works well with thin bone in pork chops. Yum!

Looks awesomely yummy! However, the cuisine should be Mexico, not Argentina... ;-) (Couldn't find how to change it.)

I grilled fresh snapper in my smoker using oak and a bit of hickory. This recipe is a real winner!

Fresh snapper is plentiful here on the Gulf Coast so this recipe is a real winner. We like it over some Texmati rice. The picture by Susan is truly wonderful also.
