Waco Chicken Ingredients
1/4 cup
Butter
1 can (12 oz) Campbells Cream of
Chicken
Soup
1 large
Onion
diced
1 can (12 oz) Campbells
Cheddar
Cheese Soup
1 tablespoon
Garlic
minced
1 can (16 oz) Diced
Tomato
es with green chilies
1 can (16 oz) Sliced
Mushroom
s drained
1 tablespoon
Chili powder
2 pounds Boneless, skinless
chicken breast
s cubed
3 cups Prepared White
Rice
1 can (12 oz) Campbells
Cream of Mushroom
2 cups
Cheddar
cheese grated
Instructions for Waco Chicken
Preheat oven to 375 F. In a large pot on medium heat, melt the butter. Add the onion, garlic and mushrooms, saute until onion is translucent. Add chicken and cook until no longer any pink is showing. Add the Cream of Mushroom, Cream of Chicken, Cheddar Cheese soup, Diced Tomatoes and Chili Powder. Stir until well blended. Stir in the cooked white rice and pour into a greased 9 x 12 casserole dish. Bake for 30 minutes or until the center is bubbling. Sprinkle on grated cheddar cheese and let set until cheese is melting. Serve hot.

Made it for a potluck at work. I liked it, but the people who ate it loved it! One friend asked to take the rest home to her husband. It was a hit. Next time I'll use fewer canned mushrooms but no one complained.
