Shrimp Scampi Cilantro

Attractive and tasty variation on the traditional Shrimp Scampi.

Ingredients


Preparation

Heat butter and olive oil in a large skillet. Add scallions, garlic, and shrimp. Saute until shrimp just turn pink. Add vermouth, cilantro, and lemon juice and heat through. Serve over angel hair pasta and top with freshly grated parmesan or romano cheese.

It was really tastey, our kids liked it. I would change a couple things to make this a perfect meal... : ) If you want to feed 4 then double your shrimp. Also I would use 1/2 lb of Angel Hair pasta.

I will make this agien.

I went a little heavier on the cilantro, since the wife and I like it a lot. I also didn't have any vermouth so I substituted vodka. It was good enough that I don't think I'd switch to vermouth. The extra sauce from the shrimp was put in a bowl for dipping the shrimp. Very tasty.

My husband said this was fantastic, and he never says such things! If he likes something he usually says, "It''s OK". I added some chopped fresh tomato and that was a good addition, both for color and flavor. Otherwise, totally awesome recipe. I often have made classic scampi, never again after this one. SOLD!

I didn't make this with Cilantro, I only had parsley on hand and I didn't use vermouth, I used sherry, for the same reason. Even though, I made some modifications, I found this to be very tasty.

Very good, simple recipe. Would definitely make this again. While the recipe is great as-is, next time I might add some chicken stock to the saute pan to add a little more depth to the sauce.
