Black Bean Salad Ingredients

1 cup spring onions sliced1/4 cup Cilantro chopped
1 1/2 cup corn frozen 2 ea Lime Juice
2 cans black beans 1/2 ts Ground cumin
5 ea Roma tomatoes chopped1/2 ts Salt
3 tablespoon pickled Jalapenos

Instructions for Black Bean Salad

Drain and rinse beans. Combine all ingredients in a bowl and toss. Serve chilled or at room temperature.

I lessened most of the ingredients...about half the tomato and onion, and even with a fraction of the cilantro it was still too strong. But with what I've learned, it'll taste great next time. Right now, it's just pretty good.

I looked at what I had on hand and made a pantry version of this dish. 4 TBL minced onion rehydrated in 4 TBL water, 1 can corn drained, 1 can chopped tomato with green chilies drained, 4 squirts lime juice and beans, cumin, cilantro and salt as indicated. YUM!!

Had this salad for dinner tonight and fell instantly "in love". A wonderful combo of ingredients. Couldn't believe how great it tasted without the "usual" salad dressings. Will most definitely be making this a lot. Thanks for posting.
