"Real Easy" Flan

My secret family recipe! Easy to put together ahead of time. For a delicious coconut flan variation, try substituting cream of coconut (Coco Lopez, Coco Goya) for the condensed milk and garnish with shredded coconut if desired.

Ingredients

Preparation

Preheat oven to 350.

In a medium saucepan, melt the sugar over medium-high heat. Coat a round 1.5 quart pan with that caramel (if you use a metal pan, you can melt the sugar right there).

Beat the eggs and add the condensed milk and evaporated milk. Mix well.

Pour into the pan and place in another, shallow pan with water for a "bain-marie". Place in oven and bake in bain-marie at 350 for 1 hour, or until a toothpick inserted in the middle comes out clean.

Let cool and place in refrigerator until chilled and ready to serve.

To serve, cover mold with serving dish and turn over, taking care that caramel does not spill.
