Ingredients
- 1 can black eye peas
- 1 can shoepeg corn
- 1 medium onion finely chopped
- 1/2 green pepper finely chopped
- 1 tomato, finely chopped
- 1 8oz. bottle Italian salad dressing
- 1 jar Braswell~quotes pepper relish
- 1/4 chopped FRESH cilantro
- 1 clove fresh garlic finely chopped
- 1 jalapeno pepper finely chopped
Preparation
First, rinse peas and corn. (I usually shake can of peas to see if they are firm and not mushy...also, not cooked in pork when I buy them) I also do not use much Italian dressing...approx 1/4 bottle per recipe. I also substitute a can of ro-tel tomatoes for the tomato and drain off liquid.
You can use the hot ro-tel and eliminate the jalapeno pepper. I have eaten this with black beans instead of black eye peas. Just depends on which you prefer. They are both good. NOW....after all that info, mix all ingredients and refrigerate. Serve with tortilla chips or scoops.
