Pastitsio

This dish is really easy to make. Don't be put off by all the directions.

Ingredients


Preparation

In a skillet cook beef and onion until beef is brown.

Drain off excess fat.

Add undrained tomatoes, tomato paste, thyme and 1 tsp salt.

Simmer, covered, for 30 minutes, stirring often.

Meanwhile, cook macaroni according to package directions.

Drain well. Stir egg whites and cheese into macaroni. stir in meat mixture.

Turn into 13X9X2 pan.

In large sauce pan, melt butter.

Blend in flour, cinnamon, and 1 tsp salt.

Add milk all at once.

Cook, stirring constantly, until thickened and bubbly.

Remove from heat.

Gradually stir some hot sauce into egg yolks.

Blend well.

Return yolk mixture to remaining sauce, stirring rapidly.

Pour a top meat mixture.

Sprinkle lightly with additional cinnamon, if desired.

Bake at 375 deg. until heated through, 35 to 40 minutes.

Let stand 10 minutes before serving.

It was very tasty and well received. Almost could have used more feta cheese, but it was a good mixture. Compared to a "Greek" lasagna. I used penne pasta, which seemed to work very well. I'd definitely keep this on the list for a second round.
