This is a fantastic Mexican type one dish meal with the beef, refried beans, tortillas, and vegetables. You can make it to the degree of spicy you desire by the type of tomatos you use. So, go ahead....experiment. AND, OLE!!

Taco Lasagna Ingredients

1 lb Ground beef I use extra lean1 can (15 oz) Black beans rinsed and drained
1/2 cup Green pepper chopped1 can (14.5 oz) Mexican diced tomatoes undrained
1/2 cup Onion chopped6 wh Flour tortillas (8 INCHES)
2/3 cup Water 1 can (16 oz) Refried beans
1 pkg Taco seasoning mix 3 cups Shredded mexican cheese low fat if desired

Instructions for Taco Lasagna

In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered for 2 minutes.

Stir in the black beans and tomatoes. Simmer, uncovered, for 10 minutes. Place two tortillas in a greased 13-in. x 9-in. x 2-in. baking dish. Spread with half of the refried beans and beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake at 350 deg. for 25-30 minutes or until heated through and cheese is melted. YIELD: 9 servings.

What a great base recipe to play with.( It's good just the way it is.) Or I like to add a can of Mexicorn and a little Southwest Chipotle seasoning along with the rest of the ingrid. while simmering. After spreading on the refried beans I sprinkle on alittle garlic powder on them. I leave off the last two tortillas on top and add extra cheese, cover and bake.
