Preparation
Slice eggplant, salt and let drain about 30 minutes.
Drain and rinse eggplant
Coat eggplant with oil or cooking spray. Place on cookie sheet and bake at 350 degrees about 15 minutes or until soft.
Saute Onion in a little oil until soft and transparent.
Add tomatoes, garlic and spices and cook until tomatoes start to thicken.
Add ham.
Place layer of eggplant in a casserole dish.
Add a layer of tomato mixture and sprinkle with mozzerella cheese.
Continue as above, ending with eggplant layer.
Sprinkle with Romano cheese or Parmesan cheese and bake til hot and bubbling.
