Easy Cream of Mushroom Chicken Ingredients

1 tablespoon Olive oil 2 dash Salt
1 cup Mushrooms sliced2 dash Pepper
4 medium Chicken breasts skinless/boneless2 cups Rice cooked/optional
1 can (10 oz) Cream of mushroom soup

Instructions for Easy Cream of Mushroom Chicken

Heat oil in a medium skillet. Add chicken and brown both sides, about 5 minutes over medium heat. Add mushrooms and cook for 2 more minutes. Add salt and pepper to taste. Add can of cream of mushroom soup (Do not add water). Stir until chicken and mushrooms are well coated. Cover and simmer for 10 minutes (or until chicken is no longer pink), stirring once or twice.

This dish is best served over rice.

I made this for supper last night and it was very tasty! I went with 'joyofcooking's suggestion and baked it rather than simmering in the pan on the stove. It turned out great and the leftovers were perfect for lunch today.

This recipe is easy to make and very tasty. I made a few minor changes to this recipe. I baked the chicken and mushroom sauce at 375 for about 30 minutes, instead of simmering on the stove. I also added half a cup of sliced onions and fresh thyme to the mushroom sauce. I served the chicken over white rice with steamed green beans and my family loved it.
