Jim G's Cole-Slaw with Orange-Cilantro Mayo Ingredients

-- Coleslaw -- Salt and pepper & pepper
4 cups White cabbage shredded -- Mayo --
3/4 cup Red cabbage 1 Extra large egg yolk at room
1/2 cup Carrot shredded1 cup Virgin olive oil
1/2 cup Golden raisins 1 tablespoon Orange zest finely chopped
3/4 cup Roasted Pine Nuts (roasted walnuts would also work)4 tablespoons Fresh orange juice
3 tablespoons Apple cider vinger 1 tablespoon Fresh lime juice
2 bunches Yellow Mustard seed 1/4 cup Freshly chopped cilantro
1 tablespoon Sugar

Instructions for Jim G's Cole-Slaw with Orange-Cilantro Mayo

For the orange-cilantro mayo: (or just use 1 cups of prepared mayo)

Whip the egg yolk in a glass or stainless steel bowl until a light lemon color. Transfer to a blender and add the oil, drop by drop with the motor running, for the first 1/4 cup. Add the remainder in a slow, steady stream, mixing at high speed until emulsified. Add the remaining ingredients and blend together. Let sit for at least one hour to allow the orange flavor to develop.

Shred both white and red cabbage. toss all the ingredients including the orange-cilantro mayo until throuhly mixed.
