Lemon Garlic Chicken Thighs Ingredients

10 each Chicken Thighs 1/2 teaspoon Pepper
1/4 cup Vegetable oil 1 teaspoon Garlic powder
1/2 cup Lemon Juice 1 teaspoon Salt
1 teaspoon Oregano 1/2 cup Soy sauce

Instructions for Lemon Garlic Chicken Thighs

Soak the chicken pieces in salted water for 20 minutes (or just rinse if you're in a hurry), then pat the pieces dry and lay them in a baking dish. They should be a bit crowded, touching each other.

Mix up the rest of the ingredients and pour over the chicken, then let stand for 20 minutes. Bake at 400 degrees for 45 minutes or until done

This was very flavorful! I used boneless/skinless chicken breasts and baked them at 350 for 30 minutes. This one is definitely a keeper!

I marinated the meat for over 2 hours in the refrigerator. Baked the thighs in the marinade for 30 mins then removed them to a sheet pan. I allowed the thighs to brown alone, without the marinade, for the last 15 mins. Before the final baking time I sprinkled the thighs with minced garlic, kosher salt, pepper and more oregano. I left the garlic salt, salt and pepper out of the marinade mix. I knew these spices would flavor the chicken better if used directly on the chicken. I also skinned the chicken first.

I mixed a bit of the sauce with some cornstarch and added it back to the pan near the end of the cooking time. I also added about 1 TBSP honey.

Can also use a crock pot. Cook for 7 hours on low.

This is a really great recipe for thighs. I love garlic so I omited the garlic powder and put in chopped garlic from a jar. I also removed the skin. I also like to drain the juices and baste back over chicken. Wonderful flavor.
