I'm sorry, but I usually give positive reviews when I try a recipe. This one didn't work-- for one, I don't think it's necessary to flour pork chops to get a good sear. I just blot the meat well, so it's really dry. When I was cooking the mushrooms, scallions and garlic (with fresh thyme, from my herb garden) I was thinking "why don't I add the flour here, to thicken the sauce?" But, I followed the directions. The beer just didn't work, though I thought it would be a fun change from my usually wine that I use. The sauce was bitter. I had to rinse and fix the mushrooms all over again. I did my butter, a little more garlic, flour, wine, chicken stock and some heavy cream. That saved the day! The pork was tender, but the beer just doesn't work this way. Sorry.

I want to try this. The idea of using beer instead of wine sounds interesting. So many recipes suggest wine.
