Boneless Pork Loin Roast with Herbed Pepper Rub

Preparation

Pat pork dry with paper towel. In small bowl, combine all rub ingredients well and apply to all surfaces of the pork roast. Place roast in a shallow pan and roast in a 350 degrees F. oven for 1-1 1/4 hours (18-20 minutes per pound), until internal temperature, measured with a meat thermometer, registers 155 degrees F. Remove roast from oven and let rest for 5-10 minutes before slicing to serve. Serves 6-8, with leftovers.

I put potatoes and carrots with it and added butter on them so they wouldn't dry out. I also didn't have parmesan or rosemary, but it still came out good. Had to cook for longer than what the recipe stated.

This recipe is simple and delicious. I was able to impress a table full of guests with it. Everyone went back for 2nds.

i like the cracked black pepper, however, our guests were a tad overwhelmed. Next time, i will cut back on the black pepper and maybe add a touch of brown sugar to carmelize the outside and add a hint of sweetness to spice!
