Cajun Country Shrimp Boil Ingredients
1/2 lb. Large
shrimp
in shell (10 - 15 count)
1/2 tsp Black
pepper
- coarse ground
3 Red bliss

Tabasco

1 Ear of
corn
per person Cut in half
2 medium
Lemon
cut in quarters

Instructions for Cajun Country Shrimp Boil
Boil water in a large kettle on stove or outdoor cooker. Season water with salt and your choice of above flavorings along with the juice of two lemons or 2 tablespoons of vinegar. Add potatoes and cook for 10 minutes. Add carrots, sausage and onions. Bring back to a boil. When potatoes and carrots are almost tender, add corn and crabs. Bring to a boil, then add shrimp. Cook a few minutes until shrimp are just done - they will be pink in color. Drain and pour into a basket or onto platters. Have cocktail sauce and Dijon mustard at hand.

I toss the carrots in at the same time as the potatoes - otherwise they're a little crunchy. I also add the onions early for flavor too. The ingredients seemed kind of approximate - esp. the spices. I doubled all of the spice's amounts and still could have used more. I think the size of the pot and the amount of water makes a huge difference. The original recipe (Chef Rick) says add the amount of shrimp (in the recipe) per person, so that's what I did. Both times I cooked this recipe, people raved and KEPT EATING! It's really good. Thanks for posting.
