Basic Bread

Adapted from the King Arthur Flour website. Delicious and easy!

Ingredients

  • 1 package Yeast active dry yeast
  • 1 tablespoon Sugar
  • 5.5 cups All purpose flour
  • 1 tablespoon Salt
  • 0.25 cup Cornmeal
  • 2 cups Water; warm - not over 110 F
  • 2 cups Water boiling

Preparation

Put warm water in a bowl, add sugar and yeast. Stir and let sit for a couple of minutes. Gradually stir in flour and salt until dough pulls from sides of bowl. Lightly flour a surface and put dough onto it to knead.

Knead dough for 3 minutes. Then clean and grease the bowl in which you will let the dough rise. Before putting in dough, knead another 3 minutes.

Form the dough into a ball and put into the greased bowl, turning to grease all sides of the dough. Cover with a damp clean dishtowel and let rise until it doubles its size, about 1 to 2 hours.

Punch down the dough with fist and knead for a minute or so to work out the air. Cut dough in half and form two loaves. Sprinkle cornmeal on a cookie sheet, place loaves onto the sheet, and let rise for 45 minutes.

Set the oven to 450F (230C / Gas Mark 8) and preheat for 15 minutes. Put a casserole or pan on the bottom rack and pour 2 or so cups of boiling water into it. Put the cookie sheet with bread on the rack above the water, and bake for 20 minutes. When the baking time is over, turn off the oven and leave in the bread for 5 more minutes.

To keep, freeze in foil (after cooled) or leave at room temperature in a paper bag. Either of these are better for bread than refrigeration.

I tried making this bread a few days ago. Except I want to make it again becuase it didn't come out the way i thought it would. It came out hard on the outside, and a little raw in the inside. Does anyone have any suggestions for me? I would really like to make it soon again! :D Thank you!

This was easy...basic, just as the title states. Omitted corn meal and put it in loaf pans and used it for lunch bread for the kids, it is definitely better than store-bought. Only used 4 1/2 cups of flour though, and it baked about almost 20 minutes. Thank you for the recipe. :)

Very easy, I have never made bread from scratch. Ive done it in a bread machine before and the little bit of extra effort made it well worth it. My family enjoyed this as much as I did. It was enough to eat over two nights. The second night I cut it and made garlic bread to go with pasta.

This is really bland bread. It might be OK to practice with if you're just learning to bake, but it's never going to taste like good, hand made bread should.

There are a ton of better, even easier recipes to make great bread. Try Mark Bittman's No Knead bread instead.

When I made this I put whole wheat flour into it to have whole wheat bread. I put homemade wild strawberry jam on it also it was super. I believe if this is rolled out and put cinnamon in the middle then rolled it, raise and bake it. It make a great cinnamon bread. Thanks!

We found that there was to much flour, when mixing the the bread there was to much flour for the amount of liquid. However the bread was great and easy to make

I've never made bread before yet this recipe went off without a hitch. It was both wonderfully soft and flavoursome, I added the smallest amount of vanilla for a bit of flavour but I doubt it was necessary.

I forgot to bring bread with me on one of our trips to our cabin in North Ga. I thought to get on BigOven and see if I could find a basic bread recipe. Yours was perfect..Easy to make and very tasty. My husband commented that it would be OK with him if I forgot the bread again in the future, and make more of this.

I thought cornflour was the same as corn starch in the US - a very fine white powder. The cornmeal in this recipe should be ground corn - usually not as fine as flour. It's usually yellow.

Oops - good catch. I usually put in the salt with the flour. But if you leave it out, the bread will be OK, just less salty - you can just spread it with salted butter.

This bread was very easy for me to make as I usually fail at making yeast breads. The bread was a little bland so I would like to figure out how to incorporate more flavor to this bread recipe since it seems to work for me.

Thanks for the basic bread recipe. My bread machine is only good for 4 2/3 cups of flour, I guess I have to scale it down a bit, hopefully I could do it right. Since this recipe does not contain butter or shortening can I add in a few tablespoons of cooking oil to have a softer bread.

I was so excited to try this bread. Everything went perfectly according to the recipe, but the taste was a little bland for my liking. We did make garlic bread out of it and that seemed to jazz up the taste.
