Ingredients
- 2 ea Top Loin Steaks
- 2 medium Peaches chopped
- 1/4 cup Purple onion diced
- 1/2 cup Cherry tomatoes chopped
- 2 ea Bay leaf minced
- 1 medium Anaheim chili roast, peel, & seed
- 2 tablespoon Sugar to taste
- 1 medium Mango chopped
- 2 tablespoon Vinegar
- 1 medium Lime juiced
Preparation
Salsa:
Roast anaheim chili, peel off the skin and remove seeds.
Combine peaches, onion, cherry tomatoes, bay leaf, anaheim chili, and mango in 2 qt bowl. Drizzle vinegar, lime juice and sugar over mixture and combine. Chill at least 2hrs to allow the flavors to marinate together.
Steaks:
Season steaks with salt and pepper and grill to desired doneness. Let stand 5 min and slice into 1/2" strips. Garnish with the Mango Peach Salsa.
