Ingredients


Preparation

In a 10 inch skilled saute chicken which has been skinned, deboned, and cut-up; with garlic salt and 1/2 cup oil until lightly browned. Set aside.

In a 4 quart kettle saute chopped yellow onions, ginger and green pepper in 1/4 cup oil until onions are soft.

Add tomatoes and simmer 5 minutes. Add salt, black pepper thyme, tomato paste and simmer 10 minutes.

Add the cooked meat and crushed red pepper. Simmer 20 minutes.

In a 2 quart saucepan cook rice, chicken stock and onions until tender. Add the gravy of the meat to the rice.

Serve the rice on a platter arranging the meat in the center.

Serves 8

I have made this and mixed all ingredients together with rice for my

daughter to take to school for a sharing of African ethnic cooking. It was a big hit. Nearly everyone asked for the recipe.

Hello,

the recipe may be nice but it surely isn't Joloff Rice. In case you have West-African friends you can ask for the true recipe.

I would recommend covering when simmering, even though recipe doesn't mention it.

im sorry to say but that it absolutely not the way you make joloff rice. I am from ghana west africa. I have made the rice myself, tried from other west african country but never like that. That is absolutely not the way to make joloff rice. I can give you the proper way to make it

This is a great hit in our family.I did cut one can of tomato paste though. It overwelmed us the first time. Great the second time.

Wow! This was delicious. Wish I could've given 6 stars! You must try this recipe! I recommend using the chicken stock to cook the rice (not water) because it adds such a nice flavor to the dish. But if you do, leave out the extra salt.

I got this recipe from a newspaper years ago and have been making this recipe for at least 2 decades. Whether it's an authentic AFrican Version or not, I have no way of knowing. However, authentic or not, it does not matter to me -- (it's delicious) and has always gotten rave reviews from my family and friends. Anyone who has been dealing with recipes for very long, understands that there can be many numerous variations to a single recipe. All good in their own right.
