Boil chicken, remove meat from skin and bones.

Sometimes I will use 6-8 chicken breasts instead of whole chicken when I'm in a hurry.

Saute onions and green pepper.

Mix with soups, tomatoes, cubed chicken, and chicken broth.

Line bottom of Pyrex casserole with six tortillas.

Add 1/2 of chicken/soup mixture; spread over tortillas. Sprinkle grated cheese over mixture.

Then make another layer of six tortillas, chicken/soup mixture, and cheese. Cover with foil and bake at 250-300 F 1 hour until cheese

is bubbly.

Please note that you can make this recipe much lower in fat by using the fat free soups and fat free chicken broth. It turns out just as tasty.

I've also substituted Cheddar Cheese, as well as Lite Velveeta in place of the Monterey Jack cheese and it was all good.

I've made this quick, easy and very tasty casserole for both a church potluck and for a family week night meal. It’s similar to a Mexican lasagna and is made with layers of corn tortillas, a creamy and slightly spicy chicken filling, and shredded cheese. I did make some slight changes to the recipe. I used left-over roasted chicken which I shredded, homemade chicken stock instead of broth, tore the tortillas into bite-sized pieces, increased the temperature and uncovered the casserole for the last 10-minutes of baking to brown the cheese a little. Next time, I plan add some sour cream or crema to the filling along with a small can of diced green chilis for some additional flavor.

More totilla shells next time. 2 layers with 2 to each layer. Corn shells, soft.
