Anita's Chicken and Dumplings

Preparation

In large Dutch oven or kettle, combine chicken, celery, onion, carrots, parsley, poultry season, rosemary, salt, pepper; cover with water and bring to a boil. Turn down temperature and cook on low until chicken and vegetables are tender. (approximately 1 hour) Remove chicken breasts, cool, and cut up in bite size pieces and return to vegetable broth mixture in kettle.

For dumplings, combine bisquick mix, thyme, nutmeg, poultry seasoning, parsley; stir in milk just until moistened.

I usually double the dumpling recipe because we like lots of dumplings and a thicker gravy.

Drop by tablespoonfuls onto the boiling broth. Cook uncovered, for 10 minutes; cover and cook 10 minutes longer.

Just made it and YUM! I added to chicken bojon cubes though while the veggies and chicken were cooking. SO yummy!

I also woulda of added more water then the recipe called for. My water didnt even boil down yet as soon as i added my dumplings the bottom of my pan started burning and i had it on med-low heat

I made this for an ill neighbor and she called to tell me it was the BEST Chicken and Dumplings she had ever had! I have to say, this is so good. I had a perfect, husband-happy recipe years ago and lost it; now, I have recovered it with this recipe.

I made this with bone in chicken thighs (weekly special at my market) and it was the best I've ever had!

We used bone-in chicken breasts instead of boneless and we doubled up on the dumpling mixture as the recipe suggested. The dumplings took a little longer than the 20 minutes to set but only a few minutes.

We had friends stop by on their way through town and everyone devoured it. Most folks got heaping platefuls for seconds, a definite sign of success. I don't really care for chicken and dumplings but this was as good as I've ever tasted.
