Everything Muffins Ingredients
2 1/2 cup
flour
1 tsp.
vanilla
1 1/4 cup
sugar
2 cup grated
carrot
s
3 tsp. ground
cinnamon
1 medium tart apple peeled and
grate
d
2 tsp.
baking soda
1 can (8 oz) crushed pineapple,
drain
ed
1/2 tsp.
salt
1/2 cup flaked
coconut
3
eggs
1/2 cup
raisins
3/4 cup
apple
sauce
1/2 cup chopped nuts
1/2 cup oil
Instructions for Everything Muffins
In a large bowl, combine the first five ingredients. In another bowl,
combine the eggs, applesauce, oil and vanilla. Stir into dry
ingredients just until moistened (will be thick). Stir in carrots,
apple, pineapple, coconut, raisins and nuts. Fill greased or
paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20-24
minutes or until a toothpick comes out clean. Cool for 5 minutes
before removing from pans.
