Layered Taco Casserole Ingredients

1 pound ground beef or pork 1 cup chopped onion or sliced green onion
3/4 cup water 12 6-inch corn tortillas
1 pkg. (1.25 oz.) McCormick original taco seasoning4 cups shredded lettuce
1 to 3 teaspoon garlic powder 2 medium tomatoes chopped
1 container (16 oz) cottage cheese1 sour cream (optional)
2 cups shredded sharp cheddar cheese

Instructions for Layered Taco Casserole

Preheat oven to 350 degrees.

Lightly coat a 13 x 9 x 2 baking pan with nonstick cooking spray; set aside.

In large skilled cook meat until brown. Drain fat. Stir in water, taco seasoning and garlic powder. Bring to a boil; reduce heat. Simmer,
uncovered, about 5 minutes or to desired consistency; set aside.

In mixing bowl combine cottage cheese, cheddar cheese and onion.

Place 6 tortillas in prepared pan. Top with half of the meat and dollop with half of the cheese mixture. Repeat layers. Bake, uncovered for 40 to 45 minutes or until heated through.

Top with lettuce and tomatoes. Serve with sour cream, if desired.

This was so great! Easy to make, a real keeper. Next time I will add some green chilies for some added spice.

Great! I've made this 4 times. My husband also puts pickled jalapenos on top as we eat it. Very good that way.

I made it for the first time last Sunday, and everyone loved it. I had company that day, and took a chance making it for the first time. I would like to try adding sauce next time, so it would be a little saucier. Very easy to make.

Was not sure if I would like it or not but it turned out quite good. I did add about 1/2cup of enchilada sauce to mine to make it a little saucier and to make sure the corn tortillas got tender enough to eat with just a fork.

Used fresh garlic(2 cloves) Served with chunky salsa. Fine diced green chillies added to salad.
