Layered Taco Casserole

Ingredients

  • 1 pound ground beef or pork
  • 3/4 cup water
  • 1 pkg. (1.25 oz.) McCormick original taco seasoning
  • 1 to 3 teaspoon garlic powder
  • 1 container (16 oz) cottage cheese
  • 2 cups shredded sharp cheddar cheese
  • 1 cup chopped onion or sliced green onion
  • 12 6-inch corn tortillas
  • 4 cups shredded lettuce
  • 2 medium tomatoes chopped
  • 1 sour cream (optional)

Preparation

Preheat oven to 350 degrees.

Lightly coat a 13 x 9 x 2 baking pan with nonstick cooking spray; set aside.

In large skilled cook meat until brown. Drain fat. Stir in water, taco seasoning and garlic powder. Bring to a boil; reduce heat. Simmer,

uncovered, about 5 minutes or to desired consistency; set aside.

In mixing bowl combine cottage cheese, cheddar cheese and onion.

Place 6 tortillas in prepared pan. Top with half of the meat and dollop with half of the cheese mixture. Repeat layers. Bake, uncovered for 40 to 45 minutes or until heated through.

Top with lettuce and tomatoes. Serve with sour cream, if desired.

It was very good. I substituted ground turkey for the beef and fat free ricotta for the cottage cheese. Part skim ricotta works better. The fat free is very dry. You must add more water to compensate for the lack of moisture in the ground turkey.

Very tasty and easy. I cut the recipe in half, but only used 3 tortillas to layer the bottom of a 8x8 dish. I used Morning Star meal starter instead of beef or turkey because i had it in the freezer and it's super quick to heat up (no defrosting or browning). I topped the casserole with some spring salad mix and tomatoes. Next time, I will definitely add a layer of low fat refried beans; it would make this dish to die for. Also, maybe add some veggies in there, maybe some corn or even squashes...

Loved it! However, I only used 6 tortillas as there is not enough meat in 1lb to create more than 2 layers. I also added black olives, lettuce & tomato & put back in the oven for 10 minutes then served with salsa & sour cream on the side. Very Yummy!!!!

I would use less taco shells. Maybe only 6 or 8 shells.

This was pretty good. It was easy to make and looked great with the toppings. I'd probably make it in a 8x8 pan next time instead of a 13x9. It was too flat in the 13x9. It was great with salsa and taco sauce offered as a topping also.

Excellent presentation with avacado slices on the side. Taste and texture was wonderful. Prep / cook time was nothing. This is a definite "come backer"

Great! I've made this 4 times. My husband also puts pickled jalapenos on top as we eat it. Very good that way.

I'm not surprised that so many chefs have this one on their favorites list. A definate keeper! I added 1 cup of enchilada sauce.

I made it for the first time last Sunday, and everyone loved it. I had company that day, and took a chance making it for the first time. I would like to try adding sauce next time, so it would be a little saucier. Very easy to make.

Was not sure if I would like it or not but it turned out quite good. I did add about 1/2cup of enchilada sauce to mine to make it a little saucier and to make sure the corn tortillas got tender enough to eat with just a fork.

Served with chunky salsa. Fine diced green chillies added to salad.
